Here is another recipe from the recently Samsung Digital Appliances 7th Cooking Workshop last September 30. Attached herewith are photos from the event and recipes of the featured dishes.
Thai Chicken on a Bed of Spinach with Peanut Sauce
- Prepare 1 kilo spinach. Blanch in boiling water for 1 minute. Drain. Set Aside.
- Prepare 2 whole chicken breast. Remove bones, pound with meat mallet and cut into 1 inch cubes.
- For the Sauce. Put in a microwavable bowl: 1 can coconut cream, 2 tbsp. Red Curry Paste, 2 tbsp. Fish sauce, 3 tbsp. Palm sugar or brown sugar, 2 tbsp. Chopped peanuts. Mix well. Add Chicken breast. Cover with cling. Put in Samsung Smart Oven. Set to Microwave mode at 600W for 3 minutes. Remove. Mix well. Cover with Cling. Return to Samsung Smart Oven. Set to Microwave mode at 600W for another 3 minutes.
- Divide spinach into 4 and transfer to 4 ramekins. Spoon chicken curry on top of spinach. Serve hot.
